Open face strawberry pie (paca)

I'm looking for a recipe again. I want to make an open face strawberry pie. By that I mean a crust that is baked, a load of fresh strawberries that remain uncooked, some sort of glaze, and probably some whipped cream on top.

I made one of these before and the first time I did it, I thought it was one of the best things I've made. However, every time I've made it since, it's been mediocre at best. I think one of the problems is the glaze recipe I have.

So has anyone ever made a tart / pie like this with uncooked strawberries? Do you have the recipe?

Do you mean you want the strawberries to be uncooked when the pie is done, or you want them uncooked and then cooked on top of the crust?

Ah, okay. Reading again it seems you want them to stay uncooked.

So what kind of crust are you looking for? Do you want a shortcrust-type crust, or a shortcake-like crust?

Or are you specifically just looking for a glaze to go on the fresh strawberries, and you have everything else?

Because I seriously own like 30 cookbooks.

Might be good to check over at Samantha Winston's blog, too (www.samanthawinston.blogspot.com) because she posts recipes fairly often as well.

Well, I'm open to people supplying everthing they love, but it's mostly the glaze that I'm after at this exact point. I've used an orange juice based one in the past, but it bombs sometimes. I have The Joy Of Cooking, and I just found a strawberry glaze thing in there, but I'm left cold by it, so I was hoping for experience to help me out.

Hi, Haem. I think #1 is closer to what I'm after. #2 has whippe cream which I want to use too, but seems to have this thick non-pure-strawberries pie filling as well. I'll ask about translation.

my family modifies a lemon ice box pie receipe for blue berries. basically it is lemon icebox pie (lemon juice, cream cheese and whipped cream, i think) with blueberries and syrup (sprinkle sugar over fresh fruit, leave in fridge over night, and you get syrup) mixed in to the filling. then fresh blueberries sprinkled on top with a little drisel of syrup for show. it is so tasty.

i don't think that is what you want at all, but i think i may have to try it with strawberries.

Maybe you want to try a reduction of some kind? Strawberry juice with a little lemon or orange, and sugar, boiled down?
